picked up a chuck steak to grind up some burgers, wanted to try a new higher protein bun alternative so I made a batch of red lentil buns. I've made wraps before out of them but never a hamburger bun. It was ok, nothing to write home about, but a fun project for a beautiful sunny warm fall day.
First I made a batch of the buns, kind of look like reddish pancakes, it's just lentils and water, salt & pepper, fried in butter. Grinded the chuck with my last Vidalia onion of the year, sprinkled on some Dizzy Pig Cowlick & did a reverse sear with pecan.
met the boy Friday for happy hour in town, Sedona Taphouse, killer ABTs along with an Abita from NOLA, love that stuff:
