I'll have to check this when I pull my car out of winter storage in a couple weeks, it hasn't had cats for several years and nobody has ever mentioned anything about a smell. Nor have I noticed.
It isn't the 1970s anymore, there is no reason to cut out all the cats, especially on a 4.0L, you'll gain zero benefit

True. Modern cats flow well and as long as they're not plugged up, they really don't cause any significant back pressure, unlike those old pre 90s cats. They provide more good than bad.
