Reading through the thread, at one point you added carrier shims and ran another pattern. That will NOT change depth. Pinion shims are the only way to establish depth but you need to ensure you have proper carrier pre-load prior to running a pattern. You can't add it after and expect good results.
Even if your old shims were damaged, you can still measure their thickness (individually) to establish a starting point. You have a lot of time into this now which is paying dividends into your experience.
