You could rent a car in your area for $25 per day if it takes two weeks it would still be with in your $2500 budget to do it the right way.
Dennis Wells Machine Shop in Duncanville or Wayne Calvert Precision Engines in Denton are two machine shop that the AMC guys use in your area.
It is tempting to just do it quick but better to do it right and get another 300k out of the Jeep.
You were talking about a engine swap and that would take about a month if you did not run it to any issues ( ECU to swapped engine) which is always going to happen plus the tow to the muffler shop to get the exhaust system made.
That said SCB with carb and Turbo 350 would be the easiest but then you are still dealing with the wiring for all your systems.
