Clutch master cylinder / slave or throwout bearing (here we go again)

Sounds like you need a different shop. Could be nothing more than a lack of grease during assembly. The pivot, slave rod end, transmission snout, and where the TOB and its spring ride on the fork all require lube during assembly. If assembled dry, it could cause the clicking.

It seems like junk aftermarket parts are what left you stranded. Now you just gave an annoying click.

The whole mechanism is pretty simple. If your shop can't figure it out, you need a different shop
