That’s because the pulley is covering the hole from that angle but I also don’t see any fluid on the pump which I would’ve expected if it was leaking from the weep hole and blowing around in the engine compartment.

The weep hole is likely on the bottom of the pump so you would need to crawl under and look up to see it.

Yeah it looks dry on the bottom too…the only fluid I see under water pump area right above the oil pan is oily and not like coolant. I’ll clean up this area and check again. See pics
Mine did this everytime we'd go on a run. I attached a hose (5/8 I think is what slips over the square molded outlet) to the overflow bottle and routed it down towards the lower control arm. Problem solved. I think the overflow bottle just burps some fluid out at times, which drips antifreeze on the fan pulley and flings it up onto the hood. I don't seem to lose a ton of antifreeze and I top off during oil changes. It's a relatively inexpensive hack and might be worth it just to see if it fixes it.

it’s odd because it doesn’t always do it…yesterday it flung coolant all over, but 2 shorter drives today and nothing

Okay so I cleaned everything up yesterday and haven’t driven it since…I went out today to clean up some more and noticed for the first time it actually dripped a little coolant on the ground. When I looked underneath this is what I saw. (See pic)
I believe it’s leaking from bottom of radiator because when I look down from above I can see coolant in the built in tray on bottom of radiator and it overflowed onto the lower hose
My question is if there would be something else that would cause the radiator to start leaking so soon…too much pressure?

Being that you said it's relatively new, I'd guess poor build quality, possibly damaged when installed, but I really suspect it's just a low quality part. Looking at your pic, I think your leak is coming from the core-to-tank crimp.
The minds of the forum here will highly recommend you find a MoPar unit, which I think can still be found for an automatic Jeep. I have personally taken this advice. Otherwise, I think a Denso unit would also be a good choice.
