When I turn my jeep on I hear this weird noise coming from behind the glovebox I think it has something to do with my HVAC because if I move the knob to cool or heat the noise will change in pitch and emit a burping noise every once in a while. The fan is off by the way. Anyone know what's going on?

Sounds like something in the fan. Even on the lowest setting, it spins when the system is on.

Difficult to hear the noise...
The noise could be a problem with one of the damper "door" actuators; they are located near the glove compartment.
Couldn't hurt to check the fan housing to see if there is a rodent trapped inside.
