Wiring question for engine swap

Pulled my tired 2.5 and swapping in a diesel. Noticed the starter exciter wire and ignition on wires are dead. None of the grounds are connected. Like to delete no longer needed plugs like: injector plugs, throttle body, coolant temp, O2 sensor, intake temp, coil, distributor, and crank sensor. Keeping things like starter exciter wire, gauges, alternator wires, and AC wires. Can I cut and cap the unneeded components/wires or do I need to connect the wires coming out of the plugs to complete the circuits? This my first engine pull and swap. The diesel will be standalone with separate ECU and wiring harness. Appreciate any help or advice you could pass on.

How do you plan on running the stock gauges? You'll need to run the stock ECT & Oil pressure sensor to make those gauges work. You'll need some type of emulator or other way to get the tach to work. the voltage gauge obviously reads the battery.

Which diesel are you going with?

VW TDI 1.9 ALH with standalone harness and ECU.
Already installed the Jeep oil pressure and coolant sensor on the ALH engine.
For the tach using tachometer converter (digital to analog) from Fastforward.
