I was looking at a few of the Cooper models in 33x12.5R15LT and their website lists the Approved Rim width to be 8.5-11.

I thought running this size tire on 15x8 was pretty standard?

It is pretty standard. I wouldn't listen to that, because I ran Cooper STTs on my ravine wheels on my old XJ. They were 15x8 wheels, and the tires I ran were a 32".

I really like the cooper STT max tire. Its a great all around tire. When I bought tires for my 02' sport last May, the coopers came in second. The only downside was the price of each tire. I ended up with Goodyear Duratracs because America's/Discount Tire had a $60 rebate per tire for the Goodyears. At that kind of savings I couldn't justify the Coopers.

I'm still not 100% sure what I'm doing but the Max and Pro are both under consideration. Its not a DD so I can get away with a more aggressive\noisy tread.

Here's an example of a 33"x12.5" Cooper STT on a 15"x8" wheel. This is the old tread pattern, I believe this is the same tire that @Chris had. As you can see it fits just fine on an 8" wide wheel.

I've owned a jeep TJ for a total of 7 years and I still don't always know what I'm doing. If you don't know what you're doing, just ask. Everyone on this forum is great for providing help. This is a great community.

I ran the Cooper first gen STT's in a 32x1150x15. They were a very tough tire, but I didn't get great mileage out of them, and they were noisy as all get out. Hopefully, they have improved the compound on the STT Pro.
 
I have the stt max in a 34" on a duramax & stt pro's in 12.5-33" on my jeep. Both are squirly untill there wore. I like the Pro's for my Non-dd, but they're noisy.

Yes, same tires I had on my XJ! Amazing tires, but being as though I wasn't doing much off-roading, I got rid of them in favor of an AT tire.

I hate the on-road manners of MT tires in general.
